Ingredients

  • 1 tablespoon olive oil
  • 1 to 3 garlic cloves minced or crushed
  • 28 ounces canned tomatoes whole tomatoes preferable
  • 1 teaspoon salt
  • 1 teaspoon sugar

Instructions

  • Heat the olive oil in a saucepan over medium heat.

  • Add the garlic to the pan and sauté for about 1 minute until it becomes fragrant. Be careful not to burn the garlic.

  • Pour the canned tomatoes into the saucepan, along with any liquid in the can. As you are pouring, crush the tomatoes with your hand over the pan to break them up a little bit. Stir well to combine. Be sure to remove any basil that might be in the can.

  • Add the salt and sugar to the saucepan, stirring to incorporate the seasonings evenly. Bring the pan to a simmer, and cook the pizza sauce uncovered for about 25 to 30 minutes, stirring occasionally, until it has thickened.

  • Taste and adjust the seasonings.
  • Remove the pan from the heat and let the pizza sauce cool to room temperature before saucing your pizzas.

Notes

This recipe will make 2.5 to 3 cups of pizza sauce, which should be enough for at least eight 12 to 14 inch Ooni pizzas.
Briefly cooking the tomato sauce concentrates the flavor and thickens the sauce, which is important to prevent a soggy crust when you are cooking in an Ooni pizza oven.
Sugar is used in tomato sauces to balance out the acidity in the tomatoes.
You can pass the pizza sauce through a food mill or puree it using a food processor or blender. Or leave it as is if you like a chunky pizza sauce.
