Pecan Pumpkin Waffles

These Pecan Pumpkin Waffles are the perfect use for that can of pumpkin puree hiding in your pantry. Add pumpkin spice, chopped pecans, and a classic crisp waffle recipe to that pumpkin puree and you've got a Fall breakfast. Chocolate chips optional!

Ingredients

  • 5 tablespoons unsalted butter
  • 3 cups (375 grams) all-purpose flour
  • ½ cup (98 grams) brown sugar
  • 1 tablespoon baking powder
  • 1 teaspoon cinnamon
  • ½ teaspoon baking soda
  • teaspoon salt
  • teaspoon allspice
  • teaspoon powdered ginger
  • teaspoon nutmeg
  • 1 cup milk
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 small can (425 grams) pumpkin puree not pumpkin pie filling
  • ¾ cup pecans chopped (toasted, if possible)
  • ¾ cup chocolate chips optional

Instructions

  • Plug in and pre-heat your waffle maker.
  • Melt the unsalted butter in a small pan and let cool slightly.

  • In a large bowl, combine the all-purpose flour, brown sugar, baking powder, cinnamon, baking soda, ginger, nutmeg, allspice, and salt.

  • Measure the cup of milk into a 2 cup glass measuring cup, then beat in the eggs and vanilla.

  • Add the canned pumpkin puree to the dry ingredients along with the butter and liquid ingredients and combine just until mixed. Then stir in the chopped pecans and/or chocolate chips.

  • Cook in your waffle iron per the manufacturer's directions.

Notes

Feel free to substitute 2 teaspoons of pumpkin pie spice in place of the cinnamon and other pumpkin pie spices.
If you have the time, toast the pecans for a few minutes before chopping.
This recipe will make about 8 generous one-half cup pecan pumpkin waffles.
Serve warm. You can hold waffles on a baking sheet in a 200 degree Fahrenheit oven until ready to serve.
