This jalapeño raspberry Bramble is a spicy twist on yet another classic gin cocktail. It’s made with gin, lime juice, Chambord, and a spicy raspberry simple syrup. Perfect sipping alongside your favorite Mexican meal or other spicy food.

Ingredients

Raspberry jalapeño syrup

  • ½ cup sugar
  • ½ cup water
  • jalapeño seeded and sliced
  • ½ cup raspberries washed, plus three reserved for garnish

Raspberry jalapeño Bramble

  • 2 ounces Tanqueray or other dry gin
  • ¾ ounce lime juice
  • ½ ounce raspberry jalapeño syrup
  • ½ ounce Chambord or other raspberry liqueur

Instructions

Raspberry jalapeño syrup

  • Combine the sugar and water in a small pot and heat over low heat until the sugar has dissolved.
    ½ cup sugar, ½ cup water
  • Add the raspberries and chili pepper. Turn off the heat and let cool.

  • Strain the simple syrup into a clean jar.

Raspberry jalapeño Bramble

  • Fill a lowball glass with crushed ice.
  • If you want simple, mix all of the Bramble ingredients (gin, lime juice, syrup, and Chambord) into a cocktail shaker filled with cube ice. Shake and strain into your glass.
    2 ounces Tanqueray or other dry gin, ¾ ounce lime juice, ½ ounce raspberry jalapeño syrup, ½ ounce Chambord or other raspberry liqueur
  • Garnish with fresh raspberries.

Notes

You can use frozen raspberries in this jalapeño raspberry Bramble, but be aware that frozen raspberries will release more liquid, so consider cooking the raspberry syrup down if it ends up looking very watery.
You can vary the heat in this spicy gin cocktail by omitting the jalapeño or using less. Or turn it up by trying a habanero pepper as a substitute for jalapeño!
Extra raspberry jalapeño syrup can be stored in the refrigerator for 1 to 2 weeks.
Alternative presentation: add the gin and lime juice to the shaker, shake and strain as above. Combine the syrup and Chambord and pour over the top, creating a layered appearance to your Raspberry Bramble.
The Bramble is traditionally served with a straw, if you're a straw kind of person.
