Notes

This Champagne gelatin recipe will make about four small dessert servings or eight champagne jello palate cleaners.
To make Champagne jello shots, you will want to triple the recipe and use a full bottle of sparkling wine. Line an 8 inch by 8 inch pan with plastic wrap or lightly grease. Let the sparkling wine mixture cool until the gelatin is firm, and cut into 1 inch Champagne gelatin squares.
When buying sparkling wine for this Champagne jello recipe, select one on the drier side - a brut or extra dry. If you have an extra brut or if you prefer a sweeter jello, consider increasing the sugar in this recipe.
It's important to bloom the powdered gelatin before adding it to the sparkling wine mixture or it can clump.
If scaling up your Champagne jello, you will need 1 packet of gelatin powder per cup of liquid.
Nutritional information is provided for four dessert servings.
