Ingredients

olive oil

red onion, chopped

balsamic vinegar

sugar
plus more to taste

dried thyme

teaspoon
salt
plus more to taste

black pepper
plus more to taste
Instructions
In a medium pot or frying pan, heat the olive oil over medium low heat.
Add the onion and cook until softened, about 10 minutes.
Add the remaining ingredients and reduce the heat to low. Cook, stirring occasionally, until the onions have caramelized, about 45-60 minutes.
Adjust sugar, salt, and pepper to taste.
