Soup making is mostly art and a bit of kitchen science. Start with onions, garlic, celery, & carrots. Add herbs and spices. Add liquid and simmer for 30 minutes. Finish it with an acid (lemon juice or vinegar or a bit of wine) and garnish.
Why isn't this pasta e ceci?
Well, mostly because this garbanzo bean soup isn't classic. Traditionally, pasta e ceci uses ditalini, but any small pasta will work.
Pasta e ceci is traditionally finished off with grated Parmesan or Pecorino Romano. You can, of course, omit it if you are vegan or a vegetarian who avoids rennet.
