This easy garbanzo bean soup is inspired by the classic Italian chickpea soup called pasta e ceci.  It’s a hearty one pot vegetarian soup.

Olive oil Onion Carrots Celery Garlic Tomatoes Garbanzo beans      (aka chickpeas) Bay leaf Rosemary Salt and pepper Broth Vermouth or wine Small pasta shape Kale Parmesan

Tips and Tricks Soup making is mostly art and a bit of kitchen science. Start with onions, garlic, celery, & carrots. Add herbs and spices. Add liquid and simmer for 30 minutes. Finish it with an acid (lemon juice or vinegar or a bit of wine) and garnish.

Why isn't this pasta e ceci?  Well, mostly because this garbanzo bean soup isn't classic. Traditionally, pasta e ceci uses ditalini, but any small pasta will work.

Pasta e ceci is traditionally finished off with grated Parmesan or Pecorino Romano. You can, of course, omit it if you are vegan or a vegetarian who avoids rennet.
