This 4 ingredient potato soup recipe is silky smooth and tastes richer than you'd expect with just four ingredients. Serve with bread and salad, and you've got an easy dinner!

Just... Potatoes Leeks Butter Salt Nothing more!

Yukon Gold are the best soup potatoes because of their flavor and texture. Starchy Russet or baking potatoes are best in mashed potatoes, French fries, and latkes.

How to Clean Leeks Trim the ends of the leek. Next, make a partial cut running lengthwise from top to bottom. Spread the layers apart and run the leek under running water to clean.

The potato soup Melt the butter and cook the leeks until soft. Add the potatoes and salt and cover with water to simmer. When the potatoes are soft, purée.  Done!   And just 4 ingredients!

Or add... – sweet potato instead of potato – cauliflower or broccoli – spices like pepper or nutmeg – cream – cheddar or other cheese – a garnish: parsley, chives, green onion, or bacon
