Coffee and Walnut Loaf Cake

Ugly Duckling Bakery

This coffee and walnut loaf cake recipe is the perfect everyday pound cake to  make for an afternoon snack or tea or when neighbors come visiting.

Coffee and Walnut Loaf Ingredients

flour  espresso powder baking powder salt unsalted butter granulated sugar eggs  vanilla extract walnuts

Don’t be tempted to add the morning’s brewed coffee. Instant espresso or coffee is what you want when you don’t want to add liquid. Regular ground coffee just won’t dissolve like instant coffee does.

What's a "pound cake"? A pound cake uses a pound each of butter, sugar, eggs, and flour. This coffee and walnut loaf cake uses that same 1:1:1:1 ratio.

Tips and Tricks Most people don't cream butter enough. And this is really important when making a pound cake. You really do want it to be "light and fluffy!"

Tips and Tricks Be warned that pound cakes crack.  If you really really really hate the cracked top, you can hide it with a coffee buttercream. But it doesn't need it!
