Washington Redskins Football. Mt. McKinley Denali. TikTok Uuni feta pasta

What’s in a name? With TikTok Uuni feta pasta, pretty much everything.

If you know me, you know that I am not trendy. I’m not up on popular culture. I had no idea about any of the food trends of 2020 other than sourdough. I barely know what TikTok is, let alone why I should know about it.

But you’d have to be under a social media rock to have not heard about the TikTok baked feta pasta. It’s tomatoes. Plus feta. And pasta. I first looked at it and thought – it’s shrimp saganaki without the shrimp. What’s the big deal?

But then the Seattle Times ran a Washington Post article, and said that it was worth the hype. So I made it for this week’s meatless Monday. And. It. Is. Worth. The. Hype.

It’s not just that it’s easy – toss some cherry tomatoes, four cloves of garlic, olive oil, and a block of feta into the oven – and let it do its thing while you boil water for pasta. You know I’m not one to favor simplicity over taste. Au contraire. It is easy AND the flavor is amazing.

But not only is it the perfect weekday dinner. It also has a story. You know. Your typical story that begins when a Finnish blogger named Jenni Häyrinen creates a new dish that generates a shortage of feta in Finland. And it ends with the big fish in the blogosphere getting all the google hits and the SEO credit.

It’s not fair. Life isn’t fair. At least that’s what my father always told me.

But I’ve seen enough chick flicks to know that stories don’t always have to end this way. You and me. Let’s change back TikTok Uuni feta pasta!

Or at least promise me that you’ll make it for dinner.

If you make uuni feta pasta, please don’t call it TikTok feta pasta. But please do comment here or share a pic!
