The original Pornstar Martini

The porn star martini cocktail was created by Douglas Ankrah in London two decades ago. It was made with vanilla vodka, passion fruit liqueur, passion fruit purée, lime juice, and sugar or simple syrup. It’s always served with a side of bubbly.

The passion fruit cocktail started with another name. But when it was renamed the “porn star martini,” it skyrocketed in popularity and remains one of the most popular, if not the most popular, cocktails in the world.

But the story doesn’t end there. Not surprisingly, some folks objected to the name. So you can now find this delicious cocktail sometimes called a passion fruit martini.

It’s your call. I won’t object if you make my recipe and call it a passion fruit martini mocktail in front of the kids.

Ingredients

You only need a few ingredients for this mocktail. You can make this recipe with fresh passion fruit if you can find it. Just be sure to get unsweetened passion fruit purée unless you prefer a very sweet drink.

Non-alcoholic sparkling wines

Non-alcoholic sparkling wines are actually made from sparkling wines that have that the alcohol removed before bottling. These bottles are labeled “alcohol-removed” or “de-alcoholized.”

The Food and Drug Administration (FDA) says that, in order to be labeled this way, they must have less than 0.5% alcohol by volume (ABV). Compare this to standard sparkling wines which typically have over 10% ABV.

If you click on that FDA link, they then go into a bit of semantics, which I love. You see, they can’t be labeled alcohol-free because they still have some alcohol. But they can be labeled as non-alcoholic even if they’re made from standard wine because many common foods actually have low levels of alcohol.

There are so many non-alcoholic sparkling wines these days. If you want to sample one or two to go alongside your passion fruit mocktail, here’s a recent review from the folks at Food52.

Feel free to play around with different flavored bitters, if you use them.

Alcohol content in common foods

Tip from the wisequacker: it may surprise you that alcohols, both natural and added, can be found in many foods. Vanilla and other extracts are one commonly overlooked source. Vanilla, at 35% alcohol by volume, has 0.01 ounces of alcohol in a quarter teaspoon of vanilla extract.

PubMed indexed this article that measured the amount of alcohol in non-alcoholic juices. Based on their findings, an 8 ounce glass of grape juice has 0.02 to 0.07 ounces of alcohol, apple juice has 0.005 to 0.05 ounces, and orange juice has 0.01 to 0.06 ounces.

They did not measure passion fruit, so I cannot tell you the total amount of alcohol in this non-alcoholic cocktail. But I feel comfortable saying there is no more alcohol in this mocktail than in a glass of fruit juice.

Step by step

Shake the ingredients together in a shaker with a half cup of ice. Strain and serve up in a chilled coupe or martini glass.

How can I reduce the alcohol even further?

You can omit both the vanilla and bitters. To get the vanilla flavor in your porn star mocktail, slice a vanilla bean in half and add it to your simple syrup just after you have turned off the heat. Remove the vanilla bean when the syrup has cooled.

Where did you buy passion fruit purée?

I looked and called a few grocery stores in my areas and didn’t find it, even though passion fruit is in season nearly year-round in California and Hawaii. I ultimately bought my passion fruit through Amazon. You can freeze any leftover passion fruit purée in ice cube trays and then store the cubes in freezer bags.

What else can I make with non-alcoholic sparkling wine?

Make a non-alcoholic passion fruit spritz with your passion fruit purée, your non-alcoholic sparkling wine, and soda water.

Making mocktails from cocktails

Most spirit-containing cocktails can be made into alcohol-free (technically “non-alcoholic” per the FDA) or so-called virgin mocktails without losing any of their flavor. Sours like the margarita or daiquiri, which are made with a spirit, simple syrup, and citrus juice, are the easiest to convert with still or sparkling water in place of the spirit.

Ingredients

1:1 Simple Syrup

  • ¼ cup granulated sugar
  • ¼ cup water

Porn Star Martini Mocktail

  • 1 ounce (30 milliliters) passion fruit purée
  • 1 ounce (30 milliliters) lime juice from about one lime
  • 1 ounce (30 milliliters) simple syrup
  • ¼ teaspoon vanilla extract
  • 1 dash bitters optional
  • lime wheel or twist or passion fruit slice for garnish
  • 2 ounces (60 milliliters) non-alcoholic sparkling wine on the side, optional

Instructions

1:1 Simple Syrup

  • Add the granulated sugar and water to a small pot over medium to high heat and bring it to a boil, stirring occasionally.
    ¼ cup granulated sugar, ¼ cup water
  • When the sugar has dissolved into the water, turn off the heat and let the syrup cool.

Porn Star Martini Mocktail

  • Combine the passion fruit purée, lime juice, 1 ounce of the simple syrup, vanilla extract, and bitters (if using) into a cocktail shaker filled with ice.
    1 ounce (30 milliliters) passion fruit purée, 1 ounce (30 milliliters) lime juice, 1 ounce (30 milliliters) simple syrup, ¼ teaspoon vanilla extract, 1 dash bitters
  • Shake and strain into a chilled martini glass or coupe. Garnish with the lime twist, lime wheel, or half a passion fruit.
