There are some things that everyone should make at least once. Granola is one of them. It’s easy, it’s endlessly customizable, and granola in the oven makes your home smell amazing.

Because I like clumpy granola, I often add the larger number of egg whites. It does depend a bit whether I’m separating eggs or if mr. uglyducklingbakery has recently made ice cream. When leftover egg whites don’t go towards my macaron practice, I make granola.

This is a case of the “I didn’t know what I was missing” until I tried Edouardo Jordan’s recipe for macaroni and cheese. Before this, I had made my cavatappi mac n cheese like a lasagna, following the “bake until bubbly” methodology. It always resulted in a dry mac n cheese.

The plan for tonight’s Meatless Monday was Pan-Dressed Noodles from Anna Jones’s A Modern Way to Eat. Making it with this crispy baked tofu recipe was a total revelation. The recipe calls for a block of smoked tofu, which I couldn’t find in the supermarket.

Here at the ugly duckling bakery, we are not afraid of food that is rich and decadent. However, in 2021 we will be trying to eat a little more healthily and a little more meat-free. To that end, mr. uglyducklingbakery’s sister gave us A Modern Way to Eat. Anna Jones’s cookbook includes a recipe for sweet red onion and hazelnut pizzette.

I was intrigued by how the hazelnuts in the crust would impact the taste and the browning of the crust. Pizza always seems to be a challenge with a home oven that maxes out at 500F.

One pizzette was made with kale instead of spinach because that’s what we had on hand. The second was topped with sauteed Italian sausage, fennel, and garlic that was in the freezer. Kiddo is always certain to eat sausage and fennel. She’s a pretty adventurous eater, but it’s always good to be prepared, eh?

I would call tonight a moderate success. The pizzettes were tasty. But the nuttiness didn’t come through as much as I thought they would in the crust. And now I’m fantasizing about a Ooni pizza oven in order to get really crisp pizza crusts at home.
